Swiss Chard with Garlic Yogurt (Pazi Borani)


  • 3 - 4 leaves of Swiss chard
  • 1 cup plain yogurt
  • 1 garlic clove
  • 1/2 teaspoon salt
  • 1 tablespoon olive oil
  • 1/4 teaspoon paprika


  1. Wash the chard leaves well and then cut them into approximately 2 inch wide strips. Also cut the stems into 1/4 inch long pieces. Set aside.
  2. Measure one cup of plain yogurt into a small mixing bowl, add the salt and the garlic clove passed through a garlic press. Mix well, set aside.
  3. Heat the olive oil in a pan, add the paprika as soon as you remove it from heat, add 1 tablespoon water, mix, set aside.
  4. Use your steamer to steam the chard leaves. It should not require more than 5 minutes.
  5. Spread a thin layer of yogurt on the serving plate.
  6. Create a single of steamed chard leaves.
  7. Spread a thin layer of yogurt on the leaves.
  8. Spread a 1/2 teaspoon of the oil and paprika sauce on the yogurt.
  9. Continue creating layers of leaves, yogurt and sauce.  Be sure to save sufficient yogurt to spread on top.
  10. Arrange the 1/4' stem pieces in the middle and pour the remaining oil - paprika sauce for color.
