Peas in Olive Oil


INGREDIENTS:

  • 1 lb shelled fresh peas
  • 1 large onion
  • 4 small carrots
  • 1 medium tomato
  • 1 large potato (any kind is fine)
  • 1 teaspoon sugar
  • 1/3 cup olive oil
  • 1.5 cup water
  • 1/2 teaspoon salt
  • 1 clove garlic (whole)


DIRECTIONS:

  1. Finely chop the onions, set aside.
  2. Peel and cut the carrots into approximately 1/4 inch thick slices, set aside.
  3. Peel and cut the potato into small cubes, set aside.
  4. Boil 1.5 cup water, set aside.
  5. Sautee the onions in olive oil at medium heat for approximately 3-4 minutes or until the onions and shiny.
  6. Add the sliced carrots, continue sauteeing for another 2 minutes.
  7. Add the peas, continue sauteeing for another 2 minutes.
  8. Add the potato cubes.
  9. Add the garlic clove.
  10. Place the whole tomato in the center of the pot.
  11. Add the hot water.
  12. Add salt and sugar.
  13. Cook covered for 30 minutes at low heat.
