Fava Beans in Olive Oil


INGREDIENTS:

  • 1.5 lb fresh fava beans
  • 1 large onion
  • 1/4 cup olive oil
  • 1 teaspoon sugar
  • 1/2 teaspoon salt
  • fresh dill for garnish


DIRECTIONS:

  1. Trim the fava beans, set aside.
  2. Boil the water, set aside.
  3. Sautee the onions in olive oil at medium heat for approximately 3-4 minutes or until the onions and shiny.
  4. Add the fava beans and continue sauteeing for another 2 minutes.
  5. Add the hot water.
  6. Add the salt and the sugar.
  7. Cook covered at low heat for 20 minutes.
  8. Cook uncovered for another 10 minutes.
  9. Serve at room temperature, garnish with fresh, chopped dill.
