Rutabaga In OliveOil

With countless vegetables dishes Turkey is heaven for vegetarians.  Vegetables cooked in olive oil and served at room temperature are unique to the Turkish cuisine and they offer a large variety of tastes and flavors.  These are relatively simple to prepare dishes too.  Typically, chopped onions are sauteed in olive oil, then the vegetables are added and sauteed for a few more minutes so they can soak some of the olive oil.  Then, the lid is closed, heat is reduced to low and the vegetables are cooked for less than 1/2 hour.  Some of the recipes include a little tomato, mainly for umami.
