Pan Grilled Anchovies

European anchovies (Hamsi in Turkish) are abundant in Mediterrenean and Black Sea. In Turkey, it is a staple food in the Black Sea region but also very popular in Istanbul and other places.  Flash frozen European anchovies are now available in United States through Turkish grocery stores.  If you can not find them, try the same recipe using smelt.


INGREDIENTS:

  • Europen Anchovies
  • or smelts, if you can find them
  • Corn Meal
  • Salt
  • Olive oil


DIRECTIONS:

  1. Remove the heads and clean the anchovies..
  2. Coat the anchovies with a thin-layer of corn-meal.Sprinkle them with salt.
  3. Grill the anchovies on a nan-stick pan. You do not need more than a teaspoon of olive oil. Arrange them on the pan as shown in the picture above. After 3 minutes, flip the whole circle trying not to break it. Use the lid of a slightl smaller pan for flipping the anchovies. Grill the other side also for 3 minutes.
  4. Serve immediately.
