Green Lentils with Tomatoes and Peppers


INGREDIENTS:

  • 1.5 cup green lentils
  • 1 medium onion, finely chopped
  • 1 large tomato, finely chopped
  • 2 banana peppers, cut into 1/2" inch pieces
  • 1 tablespoon pepper (or tomato) paste.
  • 1/3 cup olive oil
  • 2.5 cup water
  • 1 teaspoon salt
  • Plain yogurt for garnish


DIRECTIONS:

  1. Start by boiling the water.
  2. Rinse the green lentils under running water and leave them in plenty of water overnight.
  3. Sautee the onions in olive oil for 3-4 minutes or until they are translucent.
  4. Add the green peppers, continue sauteing for a few more minutes.
  5. Add the tomato, continue sauteing for a few more minutes.
  6. Add the pepper paste and salt, mix well.
  7. Add the green lentils, mix well.
  8. Add the boiling water, simmer at low heat for 2 hours.
  9. Serve hot, garnish with plain yogurt
  10. For a very different taste try sprinkling wine vinegar!.
