Rolled Böreks with Spinach and Feta Cheese

This börek requires thicker, triangular filo leaves that you can buy from online Turkish grocery stores (e.g.  It can be served as an appetizer or as a snack throughout the day.


  • 1 lb frozen Spinach or 
  • 2 lbs fresh spinach, washed and steamed
  • 2 tablespoons olive oil
  • 3/4 cup crumbled feta cheese
  • 1/4 cup grated mozzarella
  • 2 tablespoons grated parmesan cheese
  • 1 egg
  • 2 tablespoons half and half
  • 1/4 teaspoon black pepper
  • black caraway seeds
  • sesame seeds
  • Filo leaves (cut into triangles)


  1. Thaw the frozen spinach with two tablespoons of olive oil. Do not add any water or salt. Add the black pepper, mix and let the spinach cool as you prepare the rest of the filling.
  2. Mash the feta cheese with a fork.
  3. Grate the parmesan and mozzarella, combine with the feta cheese.
  4. Separate the egg white from the yolk and add it to the cheese mixture; save the egg yolk, it will be used later.
  5. Add the cheese mixture to the spinach, mix well.
  6. Melt the butter in a small bowl.
  7. If you were not able to find triangular filo leaves, cut your circular or rectangular leaves into small triangles.
  8. You are ready to start assembling the boreks. Follow the procedure below for each filo leaf.
  9. Brush the filo leaf with melted butter.
  10. Put about two tablespoons of the filling close to the rounded edge of the filo leaf.
  11. Fold the two opposite corners of the leaf onto the filling and start rolling.
  12. Continue rolling - once you get use to this, it will take a few seconds to roll a borek.
  13. When you are done, dip the tip of the triangle in water. This is your glue that holds the the börek together. 
  14. Place each börek on your baking tray lined with oven paper.
  15. Mix the egg yolk with half and half.
  16. Brush the egg yolk - half and half mixture on the boreks and then sprinkle them with black caraway and sesame seeds.
  17. Preheat the oven to 350F.
  18. Place the tray on the center rack and bake for 45 minutes. Serve them piping hot right out of the oven.
