Potato Musakka with Ground Beef

INGREDIENTS:

2 lbs of yellow potatoes

2 medium onions, finely chopped

1 lb ground beef

4 tablespoons olive oil

1 tablespoon butter

1 cubanelle or similar pepper, cut into 1/2" slices (optional)

1 cup tomato puree

1 cup water

1 tablespoon parsley

1.5 teaspoon salt

1 teaspoon black pepper

1 tomato and 1 cubanelle pepper, sliced for the top


DIRECTIONS:

  1. Sautee the chopped onion at medium heat until translucent.
  2. Add the ground beef and continue sauteing until cooked.
  3. Add the pepper and continue sauteing for a few more minutes.
  4. Add the tomato puree, water, salt and black pepper.
  5. Bring the mixture to a boil, reduce heat and simmer for 10 minutes.
  6. While the sauce is simmering, preheat the oven to 350F.
  7. Peel the potatoes, and cut them into 1/2 thick circular slices.
  8. Grease an oven safe casserole pan with butter, neatly stack the potato slices.
  9. Spread the meat sauce evenly over the potato slices.
  10. Arrange the tomato and pepper slices on top.
  11. Bake on the center rack of the oven for 35 - 40 minutes uncovered.
