Lentil balls (Mercimek Köftesi)


  • 1 cup red lentil
  • 1 cup bulgur
  • 1 cup olive oil
  • 1 medium onion, finely chopped
  • 3 tbsp tomato paste
  • 1 cup flat parsley leaves, finely chopped
  • 5 scallions, finely chopped
  • 2 tsp red pepper
  • 2 tsp black pepper
  • 2 tsp cumin


  1. Finely chop the onion and cook in 4 tablespoons of olive oil for 4-5 minutes on medium heat until translucent. Add the tomato paste, mix, set aside.
  2. Boil red lentils in 4 cups of water. When tender, add bulgur and simmer until all the water is absorbed. When done, set aside and allow the mixture to cool down to room temperature.
  3. Add the remaining ingredients and mix well.
  4. Make small balls and serve at room temperature on romaine lettuce leaves.
